1Kg Bakels Festive Christmas Cake Mix
500g water
300g eggs
1kg Sultanas
300g Raisins
200g Currents
130g Mixed Peel
170g Glace Cherries
30g Glycerine (optional if not using alcohol to soak fruit)
Alcoholic Options
Alcohol to soak fruit in, we've tried Bundaberg Rum, Jack Daniels, Southern Comfort however most whiskeys or rums will work beautifully with this recipe. Experiment with different flavours.
Non-Alcoholic Options
Good quality orange or apple juice, we've tried organic apple juice and orange juice.
Place Group 1 ingredients in mixing bowl, blend together on low speed for 1 minute
Scrape down
Blend on 2nd speed for 3 minutes
Scrape down
Add Group 2 ingredients
Blend on low speed until fruit is evenly dispersed (approx. 2 mins)
Deposit mix into cake pans
Bake in oven on 160 degrees for approximately 1¼ to 1½ hours
Remove from oven
Allow to cool in pan for 30 minutes
Best results are obtained by washing and draining sultanas, raisins & currants then blending with glace cherries, mixed peel, glycerine and small quantity of alcoholic or non-alcholic liquid. Place into a plastic bucket or container, cover and leave overnight. You can soak your fruit for longer, continue to feed fruit mix with alcohol every 2nd day, remembering to mix the fruit and alcohol before sealing container.
For Dundee cake, decorate top of cake with blanched almonds, before baking. Glaze with boiled apricot jam.
