This Roberts Confectionery recipe is ideal for no spread vanilla biscuits and is made using their incredible mix that we now stock! These delicious biscuits can be decorated with fondant, royal icing or eaten as is.
**Please note that the yield is also dependant on how this you roll your cookies and how large your cutter is. These numbers are an approximation only**
230g unsalted room temperature butter
500g Roberts No Spread Vanilla Biscuit Mix
30ml of water
Royal Icing and/or fondant – for decorating
Preheat oven to 140ºC fan forced setting. Dice butter (230g unsalted) and beat in an electric mixer until smooth.
Scrape down the sides and base of the bowl.
Add dry Biscuit No Spread Vanilla Mix and mix on lowest speed until the dough just comes together.
Whilst the mixer is still running, add the water (30ml) and mix for a further 15 seconds.
Divide the mix into two portions. Roll out each portion between two sheets of baking paper to approximately 6mm thick.
Cut into desired shapes, removing the excess dough, before transferring to a baking tray lined with baking paper
Bake at required temperature and time (10-15mins for 6cm cookies or 20-25mins for large cookies).
Allow to cool completely on the baking tray before decorating with royal icing or fondant
