Description

Sick of baking cookies that spread and just can't get your recipe right? Roberts Confectionery has created the perfect No Spread Vanilla Biscuit Mix, perfect for creating delicious cookies that taste like vanilla shortbread.

 

This mix has been tried and testing in our Lollipops Kitchen and gets our tick of approval on both taste (utterly delicious), and its ability to hold shape!

 

This incredible biscuit mix is created with the home baker in mind to assist with achieving even, consistent biscuits with no spread every time. Use this mix to create delicious cookies or large cookies for cookie cakes and this mix holds its shape once it's cut and baked.

 

YIELD:

6cm Biscuit - approximately 35 cookies

26cm x 16cm Number Biscuit Large - approximately 2 cookies

** Please note that the yield is also dependant on how thin/thick you roll your cookies and how large your cutter is. These numbers are an approximation only **

 

INSTRUCTIONS:

  1. Preheat oven to 140ºC fan forced setting. Dice butter (230g unsalted) and beat in an electric mixer until smooth. Scrape down the sides and base of the bowl.
  2. Add dry Biscuit No Spread Vanilla Mix and mix on lowest speed until the dough just comes together. Whilst the mixer is still running, add the water (30ml) and mix for a further 15 seconds.
  3. Divide the mix into two portions. Roll out each portion between two sheets of baking paper to approximately 6mm thick.
  4. Cut into desired shapes, removing the excess dough, before transferring to a baking tray lined with baking paper.
  5. Bake at required temperature and time (10-15mins for 6cm cookies or 20-25mins for large cookies). Allow to cool completely on the baking tray before decorating.
