The Patissier 34.6% Milk Couverture Chocolate has a delicious balanced milky, creamy flavour topped with a mild nutty note. This milk chocolate is the perfect substitute for the Veliche Belgian Inspiration Milk Chocolate 32% and is perfect for pastries, cakes and ganache!

 

Note: The Patissier Milk Couverture is produced by Aalst, the group behind Veliche. The recommended substitute has been suggested by Aalst as the closest available alternative, offering similar organoleptic properties and nearly identical workability.

 

 

TO TEMPER:

  1. Melt your Inspiration 32% Milk Chocolate to 45-50°C
  2. Cool the chocolate down to 25-27°C
  3. Gently warm to 29-30°C
