Description

The Veliche Belgian Dark Chocolate (Sensation) 72% is a gourmet couverture chocolate with a powerful, bitter flavour with fruity/floral notes. The Sensation 72% has a rich concentration of cocoa and is the chocolate of choice when baking cakes, pastries, desserts, ice cream, pralines and ganache.  

 

Veliche Chocolate is made in Belgium from exclusively sourced and selected beans sourced from Rainforest Alliance Certified farms. By buying Veliche, you are guaranteed consistent flavour and quality bag after bag. These chocolates were designed to have good viscosity and consistently sized 12mm dots so it can easily be weighed and tempered.

 

TO TEMPER:

  1. Melt your Sensation 72% Dark Chocolate to 50-55°C
  2. Cool the chocolate down to 26-28°C
  3. Gently warm to 31-32°C
