Lamington Recipe

Some of us have a favourite recipe for the cake used in Lamingtons.  For our lamingtons we made for Australia Day we chose to use the Bakels All in One Sponge Cake Mix. This amazing cake mix has all the work done for you.  All you need to do it add 660ml of water to 1kg of cake mix and you're done!

Ingredients
 

1Kg Bakels All In One Sponge Cake Mix

660ml Water

Bakels Chocolate Ganache

Coconut for rolling

 

Method
Sponge Mix
  1. Place ingredients in large mixing bowl, mixtures doubles in size during whisking

  2. Combine together on speed, scrape down sides after 1 minute

  3. Continue to whisk on top speed for 6-8 minutes

  4. Then on second speed for 2 minutes

  5. Pour cake mixture into prepared cake pan

  6. Bake in oven on 190 degrees

Chocolate Ganache
  1. Bakels 1kg Chocolate Ganache

  2. Heat gently in microwave for a short time to make the ganache running for dipping cake into

  3. Gently dip your cake or spoon chocolate over the cake and then cover chocolate dipped cake into coconut and leave on plate to firm up ready for eating!

Hints

Be careful not to overcook, cooking for longer at a lower temperature can help with this.

 Cooking times vary for larger tins and cooking times vary with ovens.

 

Always grease & paper line tins.
