3kg Pettina Chocolate Paste
300g Butter (Softened)
80g Ground Almonds
800g Egg
900g Water
Place Pettina Chocolate paste, butter and ground almonds in mixing bowl and blend together with a whisk - Do not form a paste.
Add half of the egg and water and whisk for 1 minute on low speed.
Add the remainder of egg and water and whisk for a further 1 minute on low speed.
Scrape down sides of bowl
Whisk on top speed for 5 minutes.
Whisk on second speed for 2 minutes.
Scale as desired.
Place in oven at 170ºC until baked through.
