Ingredients

3kg Pettina Chocolate Paste

300g Butter (Softened)

80g Ground Almonds

800g Egg

900g Water

Method
  1. Place Pettina Chocolate paste, butter and ground almonds in mixing bowl and blend together with a whisk - Do not form a paste.

  2. Add half of the egg and water and whisk for 1 minute on low speed. 

  3. Add the remainder of egg and water and whisk for a further 1 minute on low speed.

  4. Scrape down sides of bowl

  5. Whisk on top speed for 5 minutes.

  6. Whisk on second speed for 2 minutes.

  7. Scale as desired.

  8.  Place in oven at 170ºC until baked through.
