Isomalt crystals have a high resistance to humidity and will not crystallise. If no colour is added, the candy will harden clear. To colour isomalt crystal candy, add colour gel. Isomalt is very easy to use to make your own jewels and crystalline projects. Once cooked it can be cast right away or poured/cooled/stored for future use. Once stored you just reheat the required amount to a liquid pouring state to use it.
To prevent your isomalt from going cloudy in humid condition, spray it with a confectioner's glaze, or a gloss spray, to seal it.
